By default, yes — each brand ships its own app (Mi Home, Qubo, Tapo, Hik-Connect, CP Plus and so on), so a mixed-brand home can end up juggling several. There are two ways to avoid that. The tidiest is to buy within one ecosystem so a single brand app covers everything. Usually not. The app itself is free, and if your camera records to a local microSD card or a DVR/NVR, you can view live and play back footage remotely at no ongoing cost. A cloud plan adds off-site storage — handy if a camera is stolen or damaged — and sometimes AI features like person or package detection, but it's optional for many homes, and some brands market it as if it were essential when it isn't. Almost always it's your internet, not the app. When you watch remotely, the video streams out of your home, so it depends on your broadband's upload speed and the camera being online — a weak or congested connection causes lag, buffering or dropouts, and this gets worse with several cameras or higher resolutions. It helps to make sure the camera has a strong WiFi signal, that your upload speed is adequate, and to lower the stream quality for remote viewing if needed. They can be very secure, but because the app is a remote gateway into cameras inside your home, security is on you as much as the vendor. The essentials: set a strong, unique password (never reuse one, and change any default), turn on two-factor authentication so a stolen password alone isn't enough, keep the app and camera firmware updated, and be careful who you share access with — remove people and old logins you no longer need.
